Huila Las Flores

Grown on small family farms around Pitalito in southern Huila, this washed Colombian is picked in several passes so only ripe cherries make it to the mill. The result is a cup that is sweet, clean and endlessly drinkable.

Expect crisp red apple, the brown sugar depth of panela and a soft milk chocolate finish. It is forgiving across brew methods and shines as a filter coffee or a sweet, balanced espresso.

• Filter: 60 g per liter, medium grind
• Espresso: 18 g in, 38 g out in 28 to 30 seconds
